Rice and Beans
This classic rice and beans dish is a staple in many cuisines and is packed with flavor and nutrients.
Ingredients - Serves 6
- Lime - 1, juiced
- Cilantro - 2 tablespoons, chopped
- Vegetable broth - 2 cups
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Black beans - 1 can, drained and rinsed
- White rice - 1 cup
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the diced onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened, about 5 minutes.
- Add the cumin, paprika, salt, and black pepper. Stir to coat the vegetables with the spices.
- Add the white rice and stir to combine with the vegetables and spices.
- Pour in the vegetable broth and bring to a boil.
