Let's Get Started

  1. In a large pot, bring water to a boil. Add the whole chicken and cook for about 30-40 minutes, or until fully cooked. Remove the chicken from the pot and let it cool. Once cooled, shred the chicken meat and set aside.
  2. In a separate pot, rinse the jasmine rice under cold water until the water runs clear. Drain the rice and set aside.
  3. In a large saucepan, heat some oil over medium heat. Add the minced garlic and grated ginger, and cook until fragrant.
  4. Add the drained rice to the saucepan and stir to coat the rice with the garlic and ginger.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the saucepan, and let the rice cook for about 15-20 minutes, or until all the liquid is absorbed and the rice is cooked.
  6. In a small bowl, mix together the soy sauce, fish sauce, and sugar to make the sauce.
  7. To serve, place a portion of the cooked rice on a plate. Top with shredded chicken, cucumber slices, chopped cilantro, and green onions. Drizzle the sauce over the dish.
  8. Garnish with lime wedges and serve hot.
