Reuben Mac and Cheese

  1. Preheat your oven to 375°F and grease a baking dish.
  2. Cook the elbow macaroni according to the package instructions, then drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Stir in the flour until smooth.
  4. Gradually whisk in the milk, then bring to a boil. Cook and stir until thickened.
  5. Remove from heat and stir in the Swiss cheese until melted.
  6. Add the cooked macaroni, corned beef, sauerkraut, and Thousand Island dressing to the saucepan. Stir until well combined.
  7. Transfer the mixture to the prepared baking dish. Sprinkle with rye bread crumbs.
  8. Bake for 20-25 minutes, or until bubbly and golden brown.
