Reuben Mac and Cheese
A delicious twist on the classic Reuben sandwich and macaroni and cheese. This recipe combines the best of both worlds into a hearty and satisfying dish.
Ingredients - Serves 6
- Rye bread crumbs - 1 cup
- Thousand island dressing - 1/2 cup
- Sauerkraut - 1 cup, drained
- Corned beef - 1 cup, chopped
- Swiss cheese - 2 cups, shredded
- Milk - 2 cups
- All-purpose flour - 1/4 cup
- Butter - 4 tablespoons
- Elbow macaroni - 2 cups
Let's Get Started
- Preheat your oven to 375°F and grease a baking dish.
- Cook the elbow macaroni according to the package instructions, then drain and set aside.
- In a large saucepan, melt the butter over medium heat. Stir in the flour until smooth.
- Gradually whisk in the milk, then bring to a boil. Cook and stir until thickened.
- Remove from heat and stir in the Swiss cheese until melted.
- Add the cooked macaroni, corned beef, sauerkraut, and Thousand Island dressing to the saucepan. Stir until well combined.
- Transfer the mixture to the prepared baking dish. Sprinkle with rye bread crumbs.
- Bake for 20-25 minutes, or until bubbly and golden brown.
