Reuben Country Potatoes

- Thousand island dressing - 1/2 cup
- Swiss cheese - 1 cup, shredded
- Sauerkraut - 1 cup, drained
- Corned beef - 1 cup, chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Potatoes - 4 large, cubed

- Preheat the oven to 400°F.
- Toss the potatoes with the olive oil, salt, and pepper. Spread them out on a baking sheet.
