Pastrami Spring Rolls
These unique spring rolls combine the flavors of a classic deli sandwich with a popular Asian appetizer.
Ingredients - Serves 4
- Vegetable oil - For frying
- Thousand island dressing - 1/2 cup
- Spring roll wrappers - 8
- Sauerkraut - 1 cup, drained
- Swiss cheese - 4 slices
- Pastrami - 1/2 pound, thinly sliced
Let's Get Started
- Lay out a spring roll wrapper and place a slice of pastrami, a slice of Swiss cheese, and a spoonful of sauerkraut in the center.
- Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up tightly.
- Repeat with the remaining wrappers and filling.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Fry the spring rolls in batches until golden brown, about 3-4 minutes.
- Drain on paper towels and serve with Thousand Island dressing for dipping.
