Let's Get Started

  1. Cut the pork belly into 1 inch cubes.
  2. Heat a pot over medium heat, add the sugar and cook until it melts and turns into a caramel color.
  3. Add the pork belly to the pot and cook until it is browned on all sides.
  4. Add the soy sauce, Shaoxing wine, star anise, ginger, garlic, and green onions to the pot.
  5. Add enough water to the pot to just cover the pork.
  6. Bring the pot to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for 2 hours, or until the pork is tender and the sauce has thickened.
  8. Serve the red cooked pork with rice.
