Red Bliss Potato Salad
A classic, creamy potato salad made with red bliss potatoes and a tangy dressing.
Ingredients - Serves 6
- Parsley - 2 tablespoons, finely chopped
- Red onion - 1/2, finely chopped
- Celery - 2 stalks, finely chopped
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- White wine vinegar - 1 tablespoon
- Dijon mustard - 2 tablespoons
- Mayonnaise - 1 cup
- Red bliss potatoes - 2 pounds
Let's Get Started
- Place the potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15 minutes. Drain and let cool.
- In a large bowl, combine the mayonnaise, mustard, vinegar, salt, and pepper.
