Rava Kesari
Rava Kesari is a popular South Indian sweet made with semolina, sugar, ghee, water or milk and cardamom powder.
Ingredients - Serves 4
- Saffron strands - Few
- Raisins - 1 tablespoon
- Cashews - 10, broken
- Cardamom powder - 1/2 teaspoon
- Water - 2.5 cups
- Ghee - 1/2 cup
- Sugar - 1 cup
- Semolina (rava) - 1 cup
Let's Get Started
- Heat 1 tablespoon of ghee in a pan, add the cashews and raisins, fry till they become golden. Remove them and keep aside.
- In the same pan, add the semolina and roast on a low flame till it becomes golden and aromatic. Remove it and keep aside.
- In the same pan, add water and sugar. Let the sugar dissolve completely.
- Then add the roasted semolina slowly, stirring continuously to avoid lumps.
- Cover the pan and cook on a low flame till the semolina absorbs all the water.
- Add the remaining ghee, cardamom powder, fried cashews, raisins and saffron strands. Mix well.
- Cook for another 2-3 minutes on low flame.
- Rava Kesari is ready to serve.
