  1. In a bowl, mix the flour and yogurt together to form a thick batter. Let it ferment for about 8-10 hours or overnight.
  2. To make the sugar syrup, heat the sugar and water in a pan. Add the saffron strands and lemon juice. Stir until the sugar dissolves completely and the syrup becomes sticky.
  3. Heat the oil or ghee in a pan for deep frying.
  4. Pour the batter into a piping bag or a squeeze bottle. Squeeze the batter in hot oil in a circular motion to make the jalebis.
  5. Fry the jalebis until they become crispy and golden. Remove them from the oil and drain on a paper towel.
  6. Soak the fried jalebis in the sugar syrup for about 2-3 minutes. Ensure that the sugar syrup is warm when you soak the jalebis.
  7. Remove the jalebis from the syrup and serve them hot.
