Shahi Tukda
Shahi Tukda is a rich and royal Mughlai dessert of fried sugar syrup coated bread topped and soaked with fragrant creamy sweet thickened milk or rabri and garnished with dry fruits.
Ingredients - Serves 4
- Silver leaf (optional) - 2
- Chopped almonds and pistachios - 1/4 cup
- Cardamom powder - 1/2 teaspoon
- Saffron strands - A few
- Water - 1/2 cup
- Sugar - 1 cup
- Full cream milk - 1 litre
- Ghee (clarified butter) - 1/2 cup
- White bread slices - 6
Let's Get Started
- Trim the edges of the bread slices and cut them into triangles. Heat ghee in a pan and when it is hot, deep fry the bread slices till golden brown.
- In another pan, add milk and cook on low heat till it is reduced to half. Add sugar and cook for another 2 minutes.
- In another pan, add sugar and water and cook till you get a one thread consistency. Add saffron and cardamom powder and mix well.
- Dip the fried bread slices in sugar syrup and arrange them in a plate. Pour the reduced milk on top.
- Garnish with almond and pistachio slivers and silver leaf. You can serve it warm or chilled.
