Rasmalai
Rasmalai is a popular Indian dessert made with cheese dumplings soaked in creamy, flavored milk. It's garnished with nuts and often served chilled.
Ingredients - Serves 4
- Chopped nuts (almonds, pistachios) - For garnish
- Saffron strands - A few
- Cardamom powder - 1/2 teaspoon
- Water - 4 cups
- Sugar - 1 cup
- Lemon juice - 2 tablespoons
- Milk - 1 litre
Let's Get Started
- Boil the milk in a heavy bottomed pan over medium heat. Stir occasionally to prevent the milk from burning at the bottom.
- Add the lemon juice to the milk and stir until the milk curdles completely.
- Drain the curdled milk and rinse under cold water to remove the lemon flavor. Squeeze out the excess water and knead to make a soft dough.
- Divide the dough into small portions and shape them into small, flat discs.
- In a large pan, combine the sugar and water and bring to a boil. Add the dough discs and cook for 10-15 minutes.
- In another pan, boil the remaining milk and reduce it to half its volume. Add the sugar, cardamom powder, and saffron strands.
- Remove the cooked dough discs from the sugar syrup, gently squeeze to remove the excess syrup, and add them to the reduced milk.
- Cook for a few more minutes, then chill in the refrigerator for a few hours.
- Garnish with chopped nuts before serving.
