Rasgulla
Rasgulla is a popular Indian sweet made of cheese balls cooked in sugar syrup till they become light and spongy.
Ingredients - Serves 4
- Rose water - 1 teaspoon
- Cardamom powder - 1/2 teaspoon
- Water - 4 cups
- Sugar - 2 cups
- Lemon juice - 2 tablespoons
- Milk - 1 litre
Let's Get Started
- Boil the milk in a heavy bottomed pan over medium heat.
- Add the lemon juice to the milk and stir until the milk curdles.
- Drain the curdled milk and wash it under cold water to remove the lemon flavor. Squeeze out the excess water.
- Knead the milk curd to make a smooth dough and divide it into small balls.
- In another pan, combine the sugar and water and bring it to a boil.
- Add the cheese balls to the boiling sugar syrup and cook for about 15 minutes.
- Add the cardamom powder and rose water to the pan and stir gently.
- Remove from heat and let the rasgullas cool. They will absorb the sugar syrup and become spongy.
