Kazandibi
Kazandibi is a traditional Turkish dessert that is a caramelized milk pudding. It has a burnt bottom layer that gives it a unique taste.
Ingredients - Serves 6
- Ground cinnamon - For garnish
- Rose water - 1 teaspoon
- Cornstarch - 3 tablespoons
- Rice flour - 3 tablespoons
- Sugar - 1 cup
- Milk - 1 litre
Let's Get Started
- In a saucepan, mix the sugar, rice flour, and cornstarch. Gradually add the milk, stirring constantly to prevent lumps.
- Place the saucepan over medium heat and bring to a boil. Reduce the heat to low and simmer, stirring constantly, until the mixture thickens.
- Remove from heat and stir in the rose water.
- Pour half of the mixture into a flat, rectangular pan. Spread evenly and let it cool.
- Pour the remaining mixture into the pan and spread evenly. Let it cool completely.
- Preheat the oven to 200°C. Place the pan in the oven and bake until the top is caramelized and has a burnt appearance.
- Remove from the oven and let it cool. Cut into squares and garnish with ground cinnamon before serving.
