Rajasthani Laal Maas
Laal Maas is a traditional Rajasthani meat dish. The name translates to 'red meat' and is named so due to the fiery red color from the combination of red chillies and meat.
Ingredients - Serves 4
- Fresh coriander leaves - for garnish
- Salt - to taste
- Yogurt - 1 cup
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 tablespoon
- Red chilli powder - 2 tablespoons
- Ginger paste - 1 tablespoon
- Garlic paste - 2 tablespoons
- Onions - 2 large, finely chopped
- Mustard oil - 4 tablespoons
- Mutton - 500 grams
Let's Get Started
- Heat the mustard oil in a pan until it starts to smoke. Then, turn off the heat and let it cool down.
- Once the oil is cooled, turn on the heat again and add the chopped onions. Fry until they turn golden brown.
- Add the ginger and garlic paste to the pan and sauté for a few minutes.
- Add the mutton to the pan and cook on high heat for 5-7 minutes, until it turns brown.
- Add the red chilli powder, coriander powder, turmeric powder, and salt to the pan and mix well.
- Beat the yogurt and add it to the pan. Cook for another 5-7 minutes.
- Cover the pan and cook on low heat for 40-45 minutes, until the mutton is tender and the flavors are well combined.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
