Raggmunk
Raggmunk is a traditional Swedish potato pancake dish, typically served with lingonberry jam and crispy bacon.
Ingredients - Serves 4
- Crispy bacon - For serving
- Lingonberry jam - For serving
- Butter - 4 tablespoons
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Milk - 1/2 cup
- Egg - 1 large
- All-purpose flour - 1/2 cup
- Onion - 1 medium, finely chopped
- Potatoes - 4 large, peeled and grated
Let's Get Started
- Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.
- In a large bowl, combine the grated potatoes, chopped onion, flour, egg, milk, salt, and black pepper. Mix well.
- Heat 1 tablespoon of butter in a large non-stick skillet over medium heat.
- Scoop about 1/4 cup of the potato mixture into the skillet and flatten it with a spatula to form a pancake.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked raggmunk to a plate and keep warm. Repeat with the remaining potato mixture, adding more butter to the skillet as needed.
- Serve the raggmunk hot with lingonberry jam and crispy bacon on the side.
