Poronkäristys
Poronkäristys is a traditional Finnish dish made with thinly sliced reindeer meat, cooked until tender and served with mashed potatoes and lingonberry jam.

- Lingonberry jam - For serving
- Potatoes - 4 large, peeled and boiled
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Beef or vegetable broth - 1 cup
- All-purpose flour - 2 tablespoons
- Onion - 1 large, finely chopped
- Butter - 2 tablespoons
- Reindeer meat - 500 grams, thinly sliced
Let's Get Started
- In a large skillet, melt the butter over medium heat.
- Add the chopped onion and cook until translucent.
- Add the thinly sliced reindeer meat to the skillet and cook until browned.
- Sprinkle the flour over the meat and onions, stirring well to coat.
- Pour in the broth and bring to a simmer.
- Cover the skillet and let the stew cook on low heat for about 45 minutes, or until the meat is tender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve the poronkäristys hot with mashed potatoes and lingonberry jam on the side.
