Let's Get Started

  1. Season the oxtail pieces with salt and pepper.
  2. Heat the olive oil in a large pot over medium heat. Add the oxtail pieces and brown on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the tomatoes and cook until they start to break down.
  5. Return the oxtail to the pot and add the wine. Bring to a boil and let it reduce for a few minutes.
  6. Add the water and bay leaves. Cover and simmer for about 4 hours, or until the meat is tender.
  7. Add the watercress and cook for a few more minutes, until it wilts.
  8. Adjust the seasoning if necessary and serve hot.
