Rabada Com Agrião

Ingredients - Serves 6
- Watercress - 1 bunch, washed and trimmed
- Bay leaves - 2
- Water - 4 cups
- Red wine - 1 cup
- Tomatoes - 4, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Oxtail - 1.5 kg, cut into pieces
Let's Get Started
- Season the oxtail pieces with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the oxtail pieces and brown on all sides. Remove from the pot and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the tomatoes and cook until they start to break down.
- Return the oxtail to the pot and add the wine. Bring to a boil and let it reduce for a few minutes.
- Add the water and bay leaves. Cover and simmer for about 4 hours, or until the meat is tender.
- Add the watercress and cook for a few more minutes, until it wilts.
- Adjust the seasoning if necessary and serve hot.
