Endive and Watercress Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the chopped endive and watercress to the pot, and cook for 5 minutes until wilted.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Using an immersion blender or regular blender, puree the soup until smooth.
  7. Stir in the lemon juice, and season with salt and pepper to taste.
  8. Serve hot and garnish with additional watercress leaves if desired.
