Endive and Watercress Soup
This refreshing and nutritious soup is made with endive, watercress, and a hint of lemon.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Watercress - 2 cups, chopped
- Endive - 4 heads, chopped
Let's Get Started
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the chopped endive and watercress to the pot, and cook for 5 minutes until wilted.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Stir in the lemon juice, and season with salt and pepper to taste.
- Serve hot and garnish with additional watercress leaves if desired.
