Italian Braised Beef Ribs with Gremolata
This hearty Italian dish features tender beef ribs slow-cooked in a rich tomato sauce and topped with a zesty gremolata.
Ingredients - Serves 4
- Lemon zest - 1 tablespoon
- Garlic - 2 cloves, minced
- For the gremolata: parsley - 1/2 cup, chopped
- Bay leaves - 2
- Canned tomatoes - 1 can, crushed
- Beef broth - 2 cups
- Red wine - 1 cup
- Tomato paste - 2 tablespoons
- Celery - 1 stalk, chopped
- Carrot - 1, chopped
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef ribs - 2 pounds
Let's Get Started
- Season the beef ribs with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Add the ribs and brown on all sides. Remove the ribs and set aside.
- In the same pot, add the onion, garlic, carrot, and celery. Cook until the vegetables are soft.
- Add the tomato paste and cook for 2 minutes.
- Add the wine and scrape the bottom of the pot to loosen any browned bits.
- Add the beef broth, crushed tomatoes, and bay leaves. Return the ribs to the pot.
- Cover the pot and simmer for 2-3 hours, or until the ribs are tender.
- To make the gremolata, combine the parsley, garlic, and lemon zest in a small bowl.
- Serve the ribs with the sauce and top with the gremolata.
