Escabeche de Pescado
Escabeche de Pescado is a traditional Filipino dish made with fried fish marinated in a tangy and flavorful sauce.
Ingredients - Serves 4
- Cooking oil - For frying
- Salt - To taste
- Black peppercorns - 1 teaspoon
- Bay leaves - 2
- Green bell pepper - 1, sliced
- Red bell pepper - 1, sliced
- Carrots - 2 medium, julienned
- Onion - 1 medium, sliced
- Ginger - 1 thumb-sized piece, sliced
- Garlic - 4 cloves, minced
- Soy sauce - 1/4 cup
- Vinegar - 1/2 cup
- Fish fillets - 4 pieces
Let's Get Started
- In a bowl, combine vinegar, soy sauce, minced garlic, sliced ginger, bay leaves, black peppercorns, and salt. Mix well to make the marinade.
- Place the fish fillets in a shallow dish and pour the marinade over them. Make sure the fish is fully coated. Marinate for at least 30 minutes.
- Heat cooking oil in a frying pan over medium heat. Fry the marinated fish fillets until golden brown and crispy. Set aside.
- In the same pan, sauté the sliced onion, julienned carrots, and sliced bell peppers until slightly softened.
- Pour the remaining marinade into the pan and bring to a simmer. Cook for a few minutes to reduce the sauce slightly.
- Place the fried fish fillets on a serving platter and pour the sauce with vegetables over them.
- Garnish with additional sliced bell peppers and serve hot with steamed rice.
