Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the chipotle peppers and tomatoes and cook for another 5 minutes.
  4. Add the shredded chicken to the skillet and stir to combine. Season with salt and pepper.
  5. Heat a separate skillet over medium heat and place a tortilla in the skillet.
  6. Sprinkle some of the cheese on one half of the tortilla, then top with some of the chicken mixture.
  7. Fold the tortilla in half over the filling and cook until the cheese is melted and the tortilla is crispy, about 2-3 minutes on each side.
  8. Repeat with the remaining tortillas, cheese, and chicken mixture.
