Quesadillas de Tinga
A traditional Mexican dish, Quesadillas de Tinga combines shredded chicken with a smoky chipotle sauce, all wrapped up in a crispy tortilla.
Ingredients - Serves 4
- Monterey jack cheese - 2 cups, shredded
- Flour tortillas - 8
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Tomatoes - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, thinly sliced
- Chipotle peppers in adobo sauce - 2, chopped
- Chicken breasts - 2, cooked and shredded
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the chipotle peppers and tomatoes and cook for another 5 minutes.
- Add the shredded chicken to the skillet and stir to combine. Season with salt and pepper.
- Heat a separate skillet over medium heat and place a tortilla in the skillet.
- Sprinkle some of the cheese on one half of the tortilla, then top with some of the chicken mixture.
- Fold the tortilla in half over the filling and cook until the cheese is melted and the tortilla is crispy, about 2-3 minutes on each side.
- Repeat with the remaining tortillas, cheese, and chicken mixture.
