Cuitlacoche Quesadillas
These quesadillas are filled with cuitlacoche (also known as corn smut), a delicacy in Mexican cuisine. The earthy flavor of the cuitlacoche pairs perfectly with the melted cheese.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Flour tortillas - 8
- Monterey jack cheese - 2 cups, shredded
- Jalapeno - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Butter - 2 tablespoons
- Cuitlacoche - 1 can
Let's Get Started
- Melt the butter in a skillet over medium heat.
- Add the onion, garlic, and jalapeno and cook until the onion is soft, about 5 minutes.
- Add the cuitlacoche and cook for another 5 minutes.
- Season with salt and pepper to taste.
- Lay out the tortillas and divide the cuitlacoche mixture and cheese evenly among them.
- Fold the tortillas in half over the filling.
- Cook the quesadillas in a skillet over medium heat until the cheese is melted and the tortillas are golden brown, about 3 minutes per side.
- Cut the quesadillas into wedges and serve with chopped cilantro on top.
