  3. Add the cuitlacoche and cook for another 5 minutes.
  4. Season with salt and pepper to taste.
  5. Lay out the tortillas and divide the cuitlacoche mixture and cheese evenly among them.
  6. Fold the tortillas in half over the filling.
  7. Cook the quesadillas in a skillet over medium heat until the cheese is melted and the tortillas are golden brown, about 3 minutes per side.
  8. Cut the quesadillas into wedges and serve with chopped cilantro on top.
