Chicken Quesadilla

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced bell pepper and onion to the skillet and cook until softened.
  3. Add the shredded chicken to the skillet and season with salt and pepper. Cook until heated through.
  4. Place a tortilla in the skillet and sprinkle with a quarter of the cheddar and Monterey Jack cheeses.
  5. Add a quarter of the chicken and vegetable mixture on top of the cheese.
  6. Top with another tortilla and cook until the bottom tortilla is golden brown.
  7. Flip the quesadilla and cook until the other side is golden brown and the cheese is melted.
  8. Remove from the skillet and repeat with the remaining ingredients.
  9. Cut the quesadillas into quarters and serve.
