Chicken Quesadilla
A delicious and easy to make chicken quesadilla. Perfect for a quick lunch or dinner.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Onion - 1, diced
- Green bell pepper - 1, diced
- Monterey jack cheese - 2 cups, shredded
- Cheddar cheese - 2 cups, shredded
- Flour tortillas - 8
- Chicken breast - 2, cooked and shredded
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the diced bell pepper and onion to the skillet and cook until softened.
- Add the shredded chicken to the skillet and season with salt and pepper. Cook until heated through.
- Place a tortilla in the skillet and sprinkle with a quarter of the cheddar and Monterey Jack cheeses.
- Add a quarter of the chicken and vegetable mixture on top of the cheese.
- Top with another tortilla and cook until the bottom tortilla is golden brown.
- Flip the quesadilla and cook until the other side is golden brown and the cheese is melted.
- Remove from the skillet and repeat with the remaining ingredients.
- Cut the quesadillas into quarters and serve.
