al Pastor Quesadilla

Ingredients - Serves 4

Let's Get Started

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Place a tortilla in the skillet and sprinkle with a quarter of the cheese.
  3. Add half a cup of the Al Pastor meat and a quarter of the pineapple on top of the cheese.
  4. Sprinkle with another quarter of the cheese and top with another tortilla.
  5. Cook until the bottom tortilla is golden and crispy, about 3 minutes.
  6. Flip the quesadilla and cook until the other side is golden and the cheese is melted, about 3 more minutes.
  7. Remove from the skillet and repeat with the remaining ingredients.
  8. Cut the quesadillas into quarters and serve with chopped cilantro on top.
