al Pastor Quesadilla
A delicious Mexican dish made with marinated pork, pineapple, and melted cheese, all folded into a crispy tortilla.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Flour tortillas - 4 large
- Monterey jack cheese - 2 cups, shredded
- Pineapple - 1 cup, diced
- Al pastor meat - 2 cups, cooked and chopped
Let's Get Started
- Heat a large skillet over medium heat and add the olive oil.
- Place a tortilla in the skillet and sprinkle with a quarter of the cheese.
- Add half a cup of the Al Pastor meat and a quarter of the pineapple on top of the cheese.
- Sprinkle with another quarter of the cheese and top with another tortilla.
- Cook until the bottom tortilla is golden and crispy, about 3 minutes.
- Flip the quesadilla and cook until the other side is golden and the cheese is melted, about 3 more minutes.
- Remove from the skillet and repeat with the remaining ingredients.
- Cut the quesadillas into quarters and serve with chopped cilantro on top.
