Cheesy Enchiladas

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the chili powder, cumin, and salt and cook for another minute.
  4. Add the tomato sauce and bring to a simmer. Cook for 5 minutes, then remove from heat.
  5. In a large bowl, combine the cheddar and Monterey Jack cheeses.
  6. Spoon a small amount of the sauce onto the center of each tortilla, then top with a handful of the cheese mixture.
  7. Roll up the tortillas and place seam-side down in a baking dish.
  8. Pour the remaining sauce over the enchiladas and sprinkle with the remaining cheese.
  9. Bake for 20 minutes, or until the cheese is melted and bubbly.
