Cheesy Enchiladas
These cheesy enchiladas are filled with a mixture of cheese, onions, and spices, then topped with a homemade enchilada sauce and more cheese.
Ingredients - Serves 4
- Flour tortillas - 8
- Monterey jack cheese - 1 cup, shredded
- Cheddar cheese - 2 cups, shredded
- Tomato sauce - 1 cup
- Salt - 1/2 teaspoon
- Cumin - 1 teaspoon
- Chili powder - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Preheat the oven to 375°F.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the chili powder, cumin, and salt and cook for another minute.
- Add the tomato sauce and bring to a simmer. Cook for 5 minutes, then remove from heat.
- In a large bowl, combine the cheddar and Monterey Jack cheeses.
- Spoon a small amount of the sauce onto the center of each tortilla, then top with a handful of the cheese mixture.
- Roll up the tortillas and place seam-side down in a baking dish.
- Pour the remaining sauce over the enchiladas and sprinkle with the remaining cheese.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
