Quesadillas de Huitlacoche
A traditional Mexican dish, these quesadillas are filled with huitlacoche, a type of corn fungus that is considered a delicacy in Mexico.
Ingredients - Serves 4
- Vegetable oil - For frying
- Salt and pepper - To taste
- Epazote - 1 tablespoon, chopped
- Garlic - 2 cloves, minced
- White onion - 1, finely chopped
- Queso fresco - 1 cup, crumbled
- Corn tortillas - 8
- Huitlacoche - 1 can
Let's Get Started
- Heat a tablespoon of oil in a pan over medium heat.
- Add the onion and garlic and sauté until the onion is translucent.
- Add the huitlacoche and epazote, season with salt and pepper, and cook for about 10 minutes.
- Heat a separate pan over medium heat and add a bit of oil.
- Place a tortilla in the pan, add a spoonful of the huitlacoche mixture and some queso fresco, then top with another tortilla.
- Cook until the bottom tortilla is crispy, then flip and cook the other side.
- Repeat with the remaining tortillas and filling.
- Serve the quesadillas hot, cut into wedges.
