Pyongan Province Japchae
Pyongan Province Japchae is a traditional Korean dish made with glass noodles, vegetables, and beef.
Ingredients - Serves 4
- Green onions, chopped - 2 stalks
- Toasted sesame seeds - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Garlic, minced - 2 cloves
- Sesame oil - 2 tablespoons
- Sugar - 2 tablespoons
- Soy sauce - 3 tablespoons
- Mushrooms, thinly sliced - 100g
- Bell pepper, thinly sliced - 1 medium
- Onion, thinly sliced - 1 medium
- Spinach - 100g
- Carrots, julienned - 1 medium
- Beef (sirloin or ribeye), thinly sliced - 200g
- Dangmyeon (korean glass noodles) - 200g
Let's Get Started
- Cook the glass noodles according to the package instructions. Drain and rinse with cold water. Set aside.
- In a bowl, marinate the beef with soy sauce, sugar, sesame oil, minced garlic, salt, and pepper. Let it sit for 10 minutes.
- Heat vegetable oil in a large pan or wok over medium-high heat. Stir-fry the marinated beef until cooked through. Remove from the pan and set aside.
- In the same pan, add more vegetable oil if needed. Stir-fry the carrots, onion, bell pepper, and mushrooms until tender.
- Add the cooked glass noodles and spinach to the pan. Stir-fry for a few minutes until everything is well combined.
- Return the cooked beef to the pan and toss everything together.
- Season with additional soy sauce, sugar, salt, and pepper to taste.
- Garnish with toasted sesame seeds and chopped green onions before serving.
