Shanghai Pancake
A delicious and crispy Chinese street food, Shanghai Pancake is a layered flatbread filled with toasted sesame and scallions.
Ingredients - Serves 4
- Vegetable oil - For frying
- Toasted sesame seeds - 1 tablespoon
- Scallions - 1 cup, finely chopped
- Sesame oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Water - 1 cup, warm
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, mix the flour and salt. Gradually add the warm water, stirring until a dough forms.
- Knead the dough on a floured surface for about 5 minutes, until smooth. Cover with a damp cloth and let rest for 15 minutes.
- Divide the dough into four equal parts. Roll out each part into a thin circle.
- Brush each circle with sesame oil, then sprinkle with scallions and sesame seeds.
- Roll up each circle into a log, then coil each log into a round dough ball. Let rest for another 15 minutes.
- Roll out each dough ball again into a thin pancake.
- Heat the vegetable oil in a frying pan over medium heat. Fry each pancake until golden brown on both sides, about 2-3 minutes per side.
- Cut the pancakes into wedges and serve hot.
