Let's Get Started

  1. In a large bowl, mix the flour and salt. Gradually add the warm water, stirring until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes, until smooth. Cover with a damp cloth and let rest for 15 minutes.
  3. Divide the dough into four equal parts. Roll out each part into a thin circle.
  4. Brush each circle with sesame oil, then sprinkle with scallions and sesame seeds.
  5. Roll up each circle into a log, then coil each log into a round dough ball. Let rest for another 15 minutes.
  6. Roll out each dough ball again into a thin pancake.
  7. Heat the vegetable oil in a frying pan over medium heat. Fry each pancake until golden brown on both sides, about 2-3 minutes per side.
  8. Cut the pancakes into wedges and serve hot.
