Pusties
Pusties are a traditional Italian pastry, filled with a rich chocolate or vanilla custard. This recipe will guide you through the process of making your own at home.
Ingredients - Serves 12
- Cornstarch - 2 tablespoons
- Cocoa powder - 1/2 cup
- Whole milk - 2 cups
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Unsalted butter - 1 cup, cold and cut into pieces
- Sugar - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour and 1/2 cup of the sugar. Add the butter and use your fingers to rub it into the flour until the mixture resembles coarse crumbs.
- In a small bowl, whisk together one of the eggs and the vanilla. Add this to the flour mixture and stir until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- While the dough is chilling, make the custard. In a saucepan, combine the milk, the remaining 1/2 cup of sugar, the cocoa powder, and the cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from the heat and let cool.
- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
- On a lightly floured surface, roll out the dough to a 1/4-inch thickness. Cut out 12 circles with a cookie cutter or glass that is slightly larger than the muffin cups. Press the dough circles into the muffin cups.
- Fill each dough cup with the cooled custard. Beat the remaining egg and brush it over the edges of the dough.
- Bake for 20 minutes, or until the edges of the pusties are golden. Let them cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
