Crostata Di Frutta Fresca
A classic Italian dessert, Crostata di Frutta Fresca is a fruit tart with a sweet pastry crust, filled with pastry cream and topped with fresh fruit.
Ingredients - Serves 8
- Apricot jam - 1/4 cup
- Fresh fruit - 2 cups, assorted
- Cornstarch - 1/4 cup
- Egg yolks - 4
- Milk - 2 cups
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Butter - 1 cup, cold and cut into pieces
- Sugar - 1/2 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour and sugar. Add the butter and mix until the mixture resembles coarse crumbs.
- Add the egg and vanilla extract and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F. Roll out the dough and fit it into a tart pan. Prick the bottom with a fork and bake for 15 minutes, or until golden.
- While the crust is baking, make the pastry cream. In a medium saucepan, heat the milk until hot but not boiling.
- In a separate bowl, whisk together the egg yolks, sugar, and cornstarch. Gradually whisk in the hot milk, then return the mixture to the saucepan.
- Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool.
- Spread the pastry cream over the baked crust. Arrange the fresh fruit on top.
- Heat the apricot jam until it is liquid, then brush it over the fruit to glaze.
- Refrigerate the tart for at least 2 hours before serving.
