Let's Get Started

  1. In a large bowl, combine the flour and sugar. Add the butter and mix until the mixture resembles coarse crumbs.
  2. Add the egg and vanilla extract and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F. Roll out the dough and fit it into a tart pan. Prick the bottom with a fork and bake for 15 minutes, or until golden.
  4. While the crust is baking, make the pastry cream. In a medium saucepan, heat the milk until hot but not boiling.
  5. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch. Gradually whisk in the hot milk, then return the mixture to the saucepan.
  6. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool.
  7. Spread the pastry cream over the baked crust. Arrange the fresh fruit on top.
  8. Heat the apricot jam until it is liquid, then brush it over the fruit to glaze.
  9. Refrigerate the tart for at least 2 hours before serving.
