Pulque
Pulque is a traditional Mexican alcoholic beverage made from the fermented sap of the maguey plant.
Ingredients - Serves 4
- Yeast - 1 tablespoon
- Sugar - 1 cup
- Water - 2 cups
- Maguey sap - 4 cups
Let's Get Started
- In a large pot, combine the maguey sap, water, and sugar. Bring to a boil over medium heat, stirring constantly until the sugar is dissolved.
- Remove the pot from the heat and let the mixture cool to room temperature.
- Once the mixture is cool, stir in the yeast.
- Cover the pot with a clean cloth and let it sit in a warm place for about 2 days, or until the mixture is fermented and bubbly.
- Strain the pulque into a clean container, discarding any solids.
- Serve the pulque chilled.
