Let's Get Started

  1. In a large pot, combine the maguey sap, water, and sugar. Bring to a boil over medium heat, stirring constantly until the sugar is dissolved.
  2. Remove the pot from the heat and let the mixture cool to room temperature.
  3. Once the mixture is cool, stir in the yeast.
  4. Cover the pot with a clean cloth and let it sit in a warm place for about 2 days, or until the mixture is fermented and bubbly.
  5. Strain the pulque into a clean container, discarding any solids.
  6. Serve the pulque chilled.
