Focaccia Messinese is a traditional Sicilian dish, a soft and fragrant flatbread topped with tomatoes, onions, and anchovies.
Ingredients - Serves 8
- Oregano - To taste
- Anchovies - 8 fillets
- Onions - 2 medium, thinly sliced
- Cherry tomatoes - 200 grams
- Extra virgin olive oil - 50 ml
- Sugar - 10 grams
- Salt - 10 grams
- Yeast - 7 grams
- Water - 300 ml
- Bread flour - 500 grams
Let's Get Started
- In a large bowl, combine the flour, water, yeast, salt, and sugar. Knead until a smooth dough forms.
- Cover the dough and let it rise for about 2 hours, or until it has doubled in size.
- Preheat the oven to 220°C (430°F).
- Roll out the dough on a baking sheet, then drizzle it with the olive oil.
- Top the dough with the cherry tomatoes, onions, and anchovies. Sprinkle with oregano.
- Bake for about 20 minutes, or until the focaccia is golden and crispy.
- Let the focaccia cool slightly before cutting into slices and serving.
