Ingredients - Serves 4

Let's Get Started

  1. Rinse the sweet rice under cold water until the water runs clear.
  2. In a large bowl, combine the rice and water. Let it soak for at least 2 hours, or overnight.
  3. Drain the rice, reserving the soaking water.
  4. In a blender, combine the rice and 1 cup of the soaking water. Blend until smooth.
  5. Pour the mixture into a large jar. Add the sugar and yeast, and stir until well combined.
  6. Cover the jar with a cloth and let it ferment at room temperature for about 3 days, or until it tastes tangy and slightly fizzy.
  7. Strain the mixture through a fine-mesh sieve, pressing down to extract as much liquid as possible. Discard the solids.
  8. Chill the cas in the refrigerator before serving.
