Cas
Cas is a traditional Korean fermented drink made from rice. It's sweet, tangy, and perfect for a refreshing treat.
Ingredients - Serves 4
- Yeast - 1 teaspoon
- Sugar - 1/2 cup
- Water - 4 cups
- Sweet rice - 1 cup
Let's Get Started
- Rinse the sweet rice under cold water until the water runs clear.
- In a large bowl, combine the rice and water. Let it soak for at least 2 hours, or overnight.
- Drain the rice, reserving the soaking water.
- In a blender, combine the rice and 1 cup of the soaking water. Blend until smooth.
- Pour the mixture into a large jar. Add the sugar and yeast, and stir until well combined.
- Cover the jar with a cloth and let it ferment at room temperature for about 3 days, or until it tastes tangy and slightly fizzy.
- Strain the mixture through a fine-mesh sieve, pressing down to extract as much liquid as possible. Discard the solids.
- Chill the cas in the refrigerator before serving.
