Puchero Andaluz

Ingredients - Serves 6
- Pepper - To taste
- Salt - To taste
- Garlic - 2 cloves, minced
- Celery - 2 stalks, chopped
- Leek - 1, chopped
- Carrots - 2, peeled and chopped
- Potatoes - 2, peeled and chopped
- Chickpeas - 1 cup, soaked overnight
- Chicken - 1/2, cut into pieces
- Pork bone - 1
- Beef bone - 1
Let's Get Started
- Place the beef bone, pork bone, and chicken in a large pot. Cover with water and bring to a boil.
- Reduce the heat to low and simmer for 1 hour.
- Add the chickpeas, potatoes, carrots, leek, celery, and garlic to the pot. Season with salt and pepper.
- Continue to simmer for another hour, or until the meat is tender and the chickpeas are cooked.
- Remove the bones from the pot. Shred the meat and return it to the pot.
- Serve the stew hot, with crusty bread on the side.
