Protein Packed Veggie Burger
This veggie burger is packed with protein and flavor. It's made with black beans, quinoa, and a variety of vegetables.
Ingredients - Serves 4
- Lettuce, tomato, and avocado - For serving
- Whole wheat buns - 4
- Egg - 1
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1/2, finely chopped
- Red bell pepper - 1, finely chopped
- Quinoa - 1 cup, cooked
- Black beans - 1 can, drained and rinsed
Let's Get Started
- In a large bowl, mash the black beans with a fork until mostly smooth.
- Add the cooked quinoa, bell pepper, onion, garlic, cumin, chili powder, salt, and pepper. Stir until well combined.
- Add the egg and mix until the mixture holds together when you form a patty.
- Form the mixture into 4 patties.
- Heat a large skillet over medium heat. Add the patties and cook for 5-7 minutes on each side, until browned and heated through.
- Serve the burgers on the whole wheat buns with lettuce, tomato, and avocado.
