Prawn Noodle Soup
This flavorful prawn noodle soup is made with fresh prawns, noodles, and a rich broth.
Ingredients - Serves 2
- Pepper - To taste
- Salt - To taste
- Chili flakes - 1/2 teaspoon
- Cilantro - 1/4 cup, chopped
- Spring onions - 2, chopped
- Bean sprouts - 1 cup
- Lime - 1, juiced
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Chicken broth - 4 cups
- Rice noodles - 200g
- Prawns - 250g
Let's Get Started
- In a large pot, heat some oil and sauté the garlic and ginger until fragrant.
- Add the prawns and cook until they turn pink and are cooked through.
- Remove the prawns from the pot and set aside.
- In the same pot, add the chicken broth, soy sauce, fish sauce, and chili flakes. Bring to a boil.
- Reduce the heat and let the broth simmer for 15 minutes to develop the flavors.
- Meanwhile, cook the rice noodles according to the package instructions. Drain and set aside.
- Once the broth is ready, season with salt and pepper to taste.
- To serve, divide the cooked noodles into bowls and ladle the hot broth over them.
- Top with the cooked prawns, bean sprouts, spring onions, and cilantro.
- Squeeze some lime juice over each bowl and serve hot.
