Prahok Kapi
Prahok Kapi is a traditional Cambodian dish made with fermented fish paste and shrimp paste.
Ingredients - Serves 4
- Steamed rice - For serving
- Fresh vegetables (such as cucumber, lettuce, and herbs) - For serving
- Water - 1/4 cup
- Vegetable oil - 2 tablespoons
- Fresh red chili - 2, thinly sliced
- Kaffir lime leaves - 4 leaves, thinly sliced
- Lemongrass - 1 stalk, minced
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Shrimp paste - 2 tablespoons
- Prahok - 1/2 cup
Let's Get Started
- In a bowl, combine the prahok and shrimp paste. Mix well until smooth.
- Heat the vegetable oil in a pan over medium heat. Add the minced garlic and chopped onion. Cook until fragrant and golden brown.
- Add the prahok and shrimp paste mixture to the pan. Stir-fry for 2-3 minutes.
- Add the fish sauce, sugar, lemongrass, kaffir lime leaves, and sliced chili. Stir-fry for another 2 minutes.
- Pour in the water and continue cooking for 5 minutes, or until the sauce thickens.
- Serve the prahok kapi with steamed rice and fresh vegetables on the side.
