Prahok
Prahok is a traditional Cambodian dish made with fermented fish paste.
Ingredients - Serves 4
- Steamed rice - For serving
- Fresh vegetables (such as cucumber, lettuce, and herbs) - For serving
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Galangal - 1 thumb-sized piece, thinly sliced
- Kaffir lime leaves - 4 leaves, thinly sliced
- Lemongrass - 1 stalk, minced
- Shallots - 2, thinly sliced
- Garlic - 4 cloves, minced
- Pork belly - 200 grams, thinly sliced
- Prahok - 200 grams
Let's Get Started
- In a mortar and pestle, pound the prahok until smooth.
- Heat the vegetable oil in a pan over medium heat.
- Add the minced garlic, sliced shallots, minced lemongrass, sliced kaffir lime leaves, and sliced galangal. Cook until fragrant.
- Add the sliced pork belly and cook until browned.
- Add the pounded prahok, fish sauce, sugar, and water. Stir well to combine.
- Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- Serve the prahok with steamed rice and fresh vegetables.
