Lou Rou Fan
Lou Rou Fan, also known as Taiwanese Braised Pork Rice Bowl, is a popular comfort food in Taiwan. The dish is made with pork belly that is slow cooked in soy sauce and spices until tender. It's served over rice and often accompanied by pickled vegetables.
Ingredients - Serves 4
- Steamed rice - 4 cups
- Hard boiled eggs - 4
- Water - 2 cups
- Cinnamon stick - 1
- Star anise - 2
- Garlic - 4 cloves, minced
- Rice wine - 1/4 cup
- Sugar - 2 tablespoons
- Soy sauce - 1/2 cup
- Pork belly - 500 grams, cut into pieces
Let's Get Started
- Heat a pot over medium heat and add the sugar. Cook until it melts and turns into a caramel color.
- Add the pork belly pieces and cook until they are browned on all sides.
- Add the soy sauce, rice wine, garlic, star anise, and cinnamon stick. Stir well to combine.
- Add the water and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 2 hours, or until the pork is tender.
- Add the hard boiled eggs in the last 30 minutes of cooking.
- Serve the braised pork and eggs over steamed rice.
