Let's Get Started

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the onion, garlic, leek, and celery. Sauté until softened, about 5 minutes.
  3. Add the carrots, potatoes, turnips, parsnips, bay leaves, thyme, salt, and pepper. Stir well to combine.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 30 minutes.
  6. Add the cabbage and smoked sausage to the pot. Stir and continue to simmer for another 15 minutes, or until the vegetables are tender.
  7. Remove the bay leaves before serving.
