Potée de Légumes Racine is a hearty French vegetable stew made with root vegetables, herbs, and spices.
Ingredients - Serves 6
- Smoked sausage - 8 ounces, sliced
- Cabbage - 1/2 small head, chopped
- Vegetable broth - 4 cups
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaves - 2
- Celery - 2 stalks, chopped
- Leek - 1, sliced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Parsnips - 2 medium, peeled and chopped
- Turnips - 2 medium, peeled and chopped
- Potatoes - 4 medium, peeled and chopped
- Carrots - 4 medium, peeled and chopped
Let's Get Started
- In a large pot, heat some olive oil over medium heat.
- Add the onion, garlic, leek, and celery. Sauté until softened, about 5 minutes.
- Add the carrots, potatoes, turnips, parsnips, bay leaves, thyme, salt, and pepper. Stir well to combine.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes.
- Add the cabbage and smoked sausage to the pot. Stir and continue to simmer for another 15 minutes, or until the vegetables are tender.
- Remove the bay leaves before serving.
- Serve hot and enjoy!
