Lentil Soup with Smoked Sausage

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sausage and cook until browned, about 5 minutes. Remove the sausage with a slotted spoon and set aside.
  3. Add the onions, carrots, celery, and garlic to the pot and cook until the vegetables are soft, about 10 minutes.
  4. Add the lentils, chicken broth, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  5. Return the sausage to the pot and continue to simmer for another 15 minutes, or until the lentils are tender.
  6. Remove the bay leaf before serving.
