Lentil Soup with Smoked Sausage
A hearty and comforting soup made with lentils, smoked sausage, and vegetables.
Ingredients - Serves 6
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Chicken broth - 6 cups
- Lentils - 1 cup, rinsed
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Onions - 2, diced
- Smoked sausage - 1 pound, sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the sausage and cook until browned, about 5 minutes. Remove the sausage with a slotted spoon and set aside.
- Add the onions, carrots, celery, and garlic to the pot and cook until the vegetables are soft, about 10 minutes.
- Add the lentils, chicken broth, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Return the sausage to the pot and continue to simmer for another 15 minutes, or until the lentils are tender.
- Remove the bay leaf before serving.
