  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside.
  2. In the same pot, add the diced onion and cook until softened, about 5 minutes.
  3. Add the chopped kale to the pot and cook until wilted, about 5 minutes.
  4. Add the diced potatoes, chicken broth, apple cider vinegar, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the potatoes are tender.
  5. In a separate pan, cook the sliced smoked sausage until browned.
  6. Serve the grunkohl hot, topped with the crispy bacon and smoked sausage slices.
