Grunkohl
Grunkohl, also known as German kale, is a traditional German dish made with kale, bacon, and potatoes. It is hearty, flavorful, and perfect for cold winter days.
Ingredients - Serves 4
- Smoked sausage - 4 links, sliced
- Salt and pepper - To taste
- Apple cider vinegar - 2 tablespoons
- Chicken broth - 2 cups
- Potatoes - 4 medium, peeled and diced
- Onion - 1 medium, diced
- Bacon - 4 slices, chopped
- Kale - 1 pound, chopped
Let's Get Started
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside.
- In the same pot, add the diced onion and cook until softened, about 5 minutes.
- Add the chopped kale to the pot and cook until wilted, about 5 minutes.
- Add the diced potatoes, chicken broth, apple cider vinegar, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the potatoes are tender.
- In a separate pan, cook the sliced smoked sausage until browned.
- Serve the grunkohl hot, topped with the crispy bacon and smoked sausage slices.
