Maniçoba
Maniçoba is a traditional Brazilian dish from the state of Pará, made with leaves of the Manioc plant that have been ground and boiled for a week, and mixed with various meats.
Ingredients - Serves 8
- Chili pepper - To taste
- Onion - 1 large, chopped
- Garlic - 5 cloves, minced
- Bacon - 200 g
- Pork feet - 2, cut into pieces
- Dried meat - 500 g
- Smoked sausage - 500 g
- Smoked pork ribs - 500 g
- Salted pork - 500 g
- Manioc leaves - 1 kg, ground
Let's Get Started
- Soak the manioc leaves in water for a week, changing the water daily.
- After a week, boil the leaves for about 4 hours until they turn a dark green color.
- In a separate pot, cook all the meats together until tender.
- In a large pot, sauté the bacon, garlic, and onion until golden.
- Add the boiled manioc leaves and the cooked meats to the pot with the sautéed bacon, garlic, and onion.
- Add the chili pepper and cook for about 2 hours, stirring occasionally.
- Serve hot with rice.
