  1. Rinse the soaked beans and place them in a large pot with enough water to cover. Add the pork ribs, sausage, bacon, ear, tail, and trotters. Bring to a boil, then reduce the heat and simmer for 2 hours.
  2. In a separate pan, sauté the onion and garlic until golden. Add this to the pot with the beans and meats.
  3. Add the bay leaves, salt, and pepper. Continue to simmer for another 2 hours, or until the beans are tender and the meats are falling off the bone.
  4. Serve the feijoada with white rice, collard greens, and farofa.
