Feijoada Completa
Feijoada Completa is a traditional Brazilian dish made with black beans, pork, and a variety of smoked meats. It is typically served with rice, collard greens, and farofa (toasted cassava flour).
Ingredients - Serves 8
- Black pepper - To taste
- Salt - To taste
- Bay leaves - 2
- Garlic - 5 cloves, minced
- Onion - 1 large, chopped
- Pork trotters - 200 grams
- Pork tail - 200 grams
- Pork ear - 200 grams
- Bacon - 200 grams, diced
- Smoked sausage - 500 grams, sliced
- Pork ribs - 500 grams, cut into pieces
- Black beans - 500 grams, soaked overnight
Let's Get Started
- Rinse the soaked beans and place them in a large pot with enough water to cover. Add the pork ribs, sausage, bacon, ear, tail, and trotters. Bring to a boil, then reduce the heat and simmer for 2 hours.
- In a separate pan, sauté the onion and garlic until golden. Add this to the pot with the beans and meats.
- Add the bay leaves, salt, and pepper. Continue to simmer for another 2 hours, or until the beans are tender and the meats are falling off the bone.
- Serve the feijoada with white rice, collard greens, and farofa.
