Potee aux Poireaux
Potee aux Poireaux is a traditional French dish made with leeks, potatoes, and smoked sausage.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Bay leaf - 1
- Cabbage - 1/2 small head, shredded
- Carrots - 2 medium, peeled and sliced
- Chicken broth - 4 cups
- Smoked sausage - 1 pound, sliced
- Potatoes - 4 medium, peeled and diced
- Leeks - 4 large, white and light green parts only, sliced
Let's Get Started
- In a large pot, heat some olive oil over medium heat.
- Add the sliced leeks and cook until softened, about 5 minutes.
- Add the diced potatoes, sliced smoked sausage, chicken broth, carrots, cabbage, bay leaf, salt, and pepper.

- Remove the bay leaf and adjust the seasoning if needed.
- Serve hot, garnished with fresh parsley.
