Potato Soup
A creamy and comforting potato soup made with potatoes, onions, and cream.
Ingredients - Serves 6
- Chives - 2 tablespoons, chopped (for garnish)
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Heavy cream - 1 cup
- Chicken broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Potatoes - 6 medium, peeled and diced
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Using a blender or immersion blender, puree the soup until smooth and creamy.
- Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
- Simmer the soup for an additional 5 minutes to heat through.
- Serve the potato soup hot, garnished with chopped chives.
