Posole

Ingredients - Serves 6

Let's Get Started

  1. In a large pot, heat some oil over medium heat. Add the pork shoulder and cook until browned on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the dried oregano, ground cumin, chili powder, salt, and pepper. Cook for another minute to toast the spices.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the pork is tender.
  5. Add the drained and rinsed hominy to the pot. Simmer for an additional 15 minutes to allow the flavors to meld together.
  6. Remove the pot from heat and stir in the lime juice and chopped cilantro.
  7. Serve the posole hot, garnished with sliced radishes, avocado slices, and crushed tortilla chips.
