Posole
Posole is a traditional Mexican soup made with hominy, meat (usually pork), and flavorful spices.
Ingredients - Serves 6
- Tortilla chips - 1 cup, crushed
- Avocado - 1, sliced
- Radishes - 4, sliced
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Chicken broth - 4 cups
- Salt and pepper - To taste
- Chili powder - 1 tablespoon
- Ground cumin - 1 teaspoon
- Dried oregano - 1 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Hominy - 2 cans (15 oz each), drained and rinsed
- Pork shoulder - 1.5 lbs, cubed
Let's Get Started
- In a large pot, heat some oil over medium heat. Add the pork shoulder and cook until browned on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
- Stir in the dried oregano, ground cumin, chili powder, salt, and pepper. Cook for another minute to toast the spices.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the pork is tender.
- Add the drained and rinsed hominy to the pot. Simmer for an additional 15 minutes to allow the flavors to meld together.
- Remove the pot from heat and stir in the lime juice and chopped cilantro.
- Serve the posole hot, garnished with sliced radishes, avocado slices, and crushed tortilla chips.
