Portobello Mushroom Sandwich

Let's Get Started

  1. Preheat the grill or grill pan over medium heat.
  2. Clean the portobello mushrooms and remove the stems.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  4. Brush the marinade onto both sides of the portobello mushrooms.
  5. Grill the mushrooms for 4-5 minutes per side, or until tender.
  6. While the mushrooms are grilling, prepare the aioli sauce by combining mayonnaise, Dijon mustard, and lemon juice in a small bowl.
  7. Toast the ciabatta bread slices on the grill for 1-2 minutes per side.
  8. Spread the aioli sauce on one side of each bread slice.
  9. Layer the grilled portobello mushrooms, provolone cheese, baby spinach, tomato slices, and red onion on two slices of bread.
  10. Top with the remaining bread slices to form sandwiches.
  11. Serve the portobello mushroom sandwiches warm and enjoy!
