  1. Preheat the oven to 400°F.
  2. Season the pork tenderloin with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork and cook until browned on all sides, about 5 minutes.
  4. Transfer the skillet to the oven and roast the pork for 15 minutes, or until the internal temperature reaches 145°F.
  5. Remove the pork from the skillet and let it rest for 5 minutes.
  6. While the pork is resting, prepare the sauce. In the same skillet, add the garlic and cook until fragrant, about 1 minute.
  7. Add the chicken broth and Dijon mustard to the skillet and bring to a simmer. Cook for 5 minutes, or until the sauce is reduced by half.
  8. Stir in the heavy cream and cook for another 2 minutes, or until the sauce is thickened.
  9. Slice the pork and serve with the mustard cream sauce. Garnish with the chopped parsley.
