Pork Tenderloin Medallions with Mushroom Sauce

Let's Get Started

  1. Season the pork medallions with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the pork and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, melt the butter. Add the mushrooms and garlic and cook until the mushrooms are browned and the garlic is fragrant, about 5 minutes.
  4. Add the chicken broth to the skillet, scraping the bottom of the skillet to loosen any browned bits. Bring to a simmer and cook for 5 minutes.
  5. Stir in the heavy cream and parsley and return to a simmer. Cook for 5 minutes, or until the sauce has thickened.
  6. Return the pork to the skillet and cook for 5 minutes, or until the pork is cooked through and the sauce is thick and creamy.
  7. Serve the pork medallions with the mushroom sauce.
