Pork Tenderloin Medallions with Mushroom Sauce

Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Heavy cream - 1/2 cup
- Chicken broth - 1 cup
- Garlic - 2 cloves, minced
- Mushrooms - 1 cup, sliced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Pork tenderloin - 1 pound, cut into 1-inch medallions
Let's Get Started
- Season the pork medallions with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, melt the butter. Add the mushrooms and garlic and cook until the mushrooms are browned and the garlic is fragrant, about 5 minutes.
- Add the chicken broth to the skillet, scraping the bottom of the skillet to loosen any browned bits. Bring to a simmer and cook for 5 minutes.
- Stir in the heavy cream and parsley and return to a simmer. Cook for 5 minutes, or until the sauce has thickened.
- Return the pork to the skillet and cook for 5 minutes, or until the pork is cooked through and the sauce is thick and creamy.
- Serve the pork medallions with the mushroom sauce.
